Spring is here and we’ve been enjoying some glorious warm weather. It seems we’ve naturally shifted from soups to salads at our house.
We all know how important it is to eat your greens, and especially about getting enough leafy greens into your diet. Throwing a variety of leafy greens into your salad is not only tasty but it also increases the diversity of plant-based foods in your diet which in turn increases the diversity of your gut microbiome.

Here’s a quick and simple spring salad that my family enjoy:
Simply throw in a variety of salad greens (I used lettuce, rocket and spinach leaves), sprinkle some fresh parmesan on top, along with some walnuts and chives. Finally dress it with your favourite olive oil and some balsamic vinegar.
